You do not seem as interested in the AOH but in the late 19th and early 20th century the AOH was a very powerful influence in Nationalist politics. Joe Devlin made it his power base in Ulster. The OO would obviously be more interesting as they have more members and have the clearest connection to events going back to the 17th century.
